To init or reimport certs, you need to shell into the protonmail-bridge container, kill the protonmail processes, chmod +x /protonmail/entrypoint.sh and run /protonmail-bridge init

Once the change are made, "just" destroy the container and it will be recreated with the correct entrypoint.
